Ingredients
Scale
1 cup all-purpose flour
1/4 cup powdered sugar
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1/2 cup fresh lemon juice
1 tablespoon lemon zest
1/2 teaspoon baking powder
Powdered sugar for dusting
Instructions
Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking dish.
In a medium bowl, mix the all-purpose flour and powdered sugar together. Cut in the softened butter until the mixture resembles coarse crumbs. Press this mixture firmly into the bottom of the prepared baking dish.
Bake the crust for 15-20 minutes, or until it becomes lightly golden.
In another bowl, whisk together the granulated sugar, large eggs, fresh lemon juice, lemon zest, and baking powder until well combined.
Pour this lemon mixture over the baked crust and return the dish to the oven. Bake for an additional 20-25 minutes until the filling has set.
Allow the lemon bars to cool completely. Dust with powdered sugar before serving.
Notes
Ensure butter is at room temperature for easier mixing. Using fresh lemons will enhance the flavor.
