Bright and sweet lemon bars with a buttery crust, perfect for sunny afternoons or special gatherings.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup lemon juice (freshly squeezed is best!)
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • A pinch of salt
  • Additional powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch pan to ensure your lemon bars come out easily.
  2. In a bowl, mix together the flour and powdered sugar. Cut in the butter until the mixture resembles coarse crumbs.
  3. Press the mixture evenly into the bottom of the prepared pan. Bake in the preheated oven for 15 minutes.
  4. Whisk together the granulated sugar, eggs, lemon juice, lemon zest, baking powder, and a pinch of salt until well combined.
  5. Pour this vibrant mixture over the baked crust and return to the oven. Bake for an additional 20 minutes.
  6. Allow your lemon bars to cool completely in the pan, then dust generously with powdered sugar and cut into squares.

Notes

Use fresh lemon juice and zest for the best flavor. Store in an airtight container in the refrigerator for up to a week.
