Instructions
Blend cottage cheese in a high-speed blender or food processor until completely smooth and creamy, with no visible curds.
Transfer the blended cottage cheese to a large mixing bowl. Add almond flour, lemon zest, honey (or maple syrup), vanilla extract, and a pinch of salt. Mix thoroughly until well combined.
Fold in fresh blueberries gently to avoid crushing them.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to firm up the mixture.
Remove the chilled mixture from the refrigerator and scoop out portions. Roll each portion between your palms to form compact balls.
