Delightful bites combining the freshness of lemon and blueberries with protein-rich cottage cheese.

Ingredients

  • 1 cup cottage cheese (preferably low-fat)
  • 1 cup fresh blueberries, plus extra for garnish
  • 1 tablespoon lemon zest (from about 1 lemon)
  • 2 tablespoons honey (or maple syrup for a vegan option)
  • 1/2 cup almond flour
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Blend cottage cheese until smooth and creamy.
  2. Transfer blended cottage cheese to a bowl and add almond flour, lemon zest, honey, vanilla extract, and salt; mix thoroughly.
  3. Fold in blueberries gently.
  4. Cover mixture and refrigerate for at least 30 minutes.
  5. Remove mixture from the refrigerator and form into compact balls.
  6. Place bites on a baking sheet and refrigerate for 1-2 hours until firm.

Notes

Pair with herbal tea or almond milk for a wholesome snack. Store leftovers in an airtight container for up to a week.
