A light and refreshing pasta dish with zesty lemon, succulent shrimp, and a buttery sauce—perfect for a summer meal.

Ingredients

  • Medium to large shrimp, peeled and deveined (about 21/25 count)
  • Spaghetti
  • Fresh lemons (for zest and juice)
  • Unsalted butter
  • Fresh garlic, minced
  • Olive oil
  • Fresh parsley, chopped
  • Red pepper flakes (optional)
  • Chicken or vegetable broth (or reserved pasta water)

Instructions

  1. Cook the spaghetti in a large pot of salted water until al dente, reserving pasta water before draining.
  2. Prepare the shrimp by patting them dry and seasoning lightly with salt and pepper.
  3. Sauté garlic and red pepper flakes in butter and olive oil until fragrant.
  4. Cook shrimp in the skillet until pink and opaque, then transfer to a plate.
  5. Build the sauce by adding more butter, lemon juice, and broth to the skillet, and simmer.
  6. Combine the drained spaghetti with the sauce, tossing to coat.
  7. Add the shrimp back into the skillet along with lemon zest and parsley.
  8. Season to taste with salt and pepper, then serve immediately.
