A delightful dish featuring tender chicken coated in a crunchy, cheesy crust with bright lemon notes.

  • 4 boneless, skinless chicken breasts
  • 1 cup Romano cheese, grated
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • 2 lemons (juice and zest)
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the breadcrumbs and the grated Romano cheese.
  3. Season the chicken breasts with salt, pepper, and the zest of one lemon.
  4. Dip each chicken breast into the beaten eggs.
  5. Coat the chicken breasts in the breadcrumb and cheese mixture.
  6. Heat the olive oil in a large skillet over medium heat.
