A simple and flavorful recipe for juicy lemon garlic chicken thighs, roasted to perfection.

  • 4 chicken thighs
  • 2 lemons (juiced)
  • 4 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix together the lemon juice, minced garlic, olive oil, salt, pepper, and oregano.
  3. Place the chicken thighs in a baking dish and pour the marinade over them.
  4. Let it sit for a few minutes; longer marinating is better.
  5. Bake in the preheated oven for 35-40 minutes, until the chicken is no longer pink at the bone.
  6. Garnish the chicken with fresh parsley before serving.

Notes

For extra flavor, marinate overnight. For crispy skin, broil for the last few minutes.
