  • 1 cup powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1/2 cup all-purpose flour
  • 1 teaspoon lemon zest
  • 1/4 cup lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 425°F (220°C). Grease four ramekins with unsalted butter and dust lightly with flour.
  2. Melt the butter in a microwave-safe bowl and stir in the powdered sugar until combined.
  3. Add the eggs and egg yolks, whisking until smooth.
  4. Combine the flour, lemon zest, lemon juice, vanilla extract, and salt, mixing until well incorporated.
  5. Pour the batter into the prepared ramekins, filling them about three-quarters full.
  6. Bake for 12-14 minutes until the edges are firm and the center is soft.
  7. Cool for a minute, then invert onto plates to serve immediately.

Notes

Best served fresh and warm with whipped cream or vanilla ice cream. Can be stored in the fridge for up to 2 days.
