A comforting and nourishing lentil curry with a delightful fusion of flavors, perfect for any dinner table.

Ingredients

  • 1 cup lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can diced tomatoes
  • 1 can coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon cumin
  • Salt to taste
  • Fresh cilantro for garnish
  • 2 tablespoons olive oil

Instructions

  1. Rinse the lentils under cool running water to remove any dirt and debris.
  2. Heat the olive oil in a large pot over medium heat until warm.
  3. Add the chopped onion, minced garlic, and grated ginger to the pot and sauté until golden brown, about 5–7 minutes.
  4. Stir in the curry powder and cumin and cook for another minute.
  5. Combine the rinsed lentils, diced tomatoes, coconut milk, and salt to the pot. Stir well.
  6. Bring the mixture to a boil, then reduce the heat and simmer for 30–40 minutes until lentils are tender.
  7. Garnish with fresh cilantro before serving.

Notes

Pairs beautifully with steamed rice or naan, can be stored in the refrigerator for up to 5 days or frozen for 3 months.
