Comforting Lentil Soup

A warm, hearty lentil soup that’s packed with flavor and perfect for chilly evenings.

Ingredients

  • 1 cup lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils under cold water in a fine mesh strainer until the water runs clear. This will remove any impurities.
  2. In a large pot, heat a splash of olive oil over medium heat. Add the chopped onion, diced carrots, and celery. Sauté until the vegetables soften and the onion becomes translucent, about 5-7 minutes.
  3. Stir in minced garlic and sauté for another minute until fragrant.
  4. Now stir in the rinsed lentils, vegetable broth, diced tomatoes, cumin, and thyme.
  5. Bring the pot to a boil, then reduce the heat to low. Cover and let it simmer for about 30-40 minutes, or until the lentils are tender.
  6. Once your lentils are tender, season the soup with salt and pepper.
  7. Ladle the soup into bowls and serve hot.

Notes

For added flavor, consider a splash of lemon juice or a few drops of hot sauce before serving. Leftovers can be stored in an airtight container for up to a week.
