Crispy potato skins filled with melted cheese, crumbled bacon, and fresh green onions, perfect for gatherings.

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup cooked and crumbled bacon
  • 2 green onions (sliced)
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). This ensures your potatoes bake to perfection!
  2. Wash the potatoes thoroughly and prick them with a fork. Bake in the preheated oven for about 45 minutes or until tender.
  3. Remove the potatoes from the oven and let them cool slightly. Cut each potato in half and scoop out some of the insides.
  4. Brush the potato skins with olive oil, then sprinkle generously with salt and pepper.
  5. Place the seasoned potato skins back in the oven, cut side up, and bake for another 10 minutes, or until crispy.
  6. Fill each skin generously with cheddar cheese, crumbled bacon, and green onions.
  7. Return the filled potato skins to the oven for an additional 5-7 minutes until the cheese is melted and bubbly.
  8. Serve with a side of sour cream for dipping. Enjoy!
