A vibrant and satisfying burrito bowl featuring seasoned ground beef, fluffy cauliflower rice, and fresh toppings, perfect for a healthy meal without the carbs.

Ingredients

  • 1.5 lbs ground beef (80/20)
  • 3 cups cauliflower rice
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup guacamole
  • 1 cup pico de gallo
  • 1 can black beans, drained and rinsed
  • 2 tbsp taco seasoning
  • 1 tbsp olive oil
  • Fresh cilantro for garnish
  • 2 limes, cut into wedges
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add ground beef, breaking it apart as you go, and cook for 5-7 minutes until fully browned.
  3. Sprinkle taco seasoning over the browned beef and stir in a splash of water. Cook for an additional 2 minutes until fragrant and evenly coated.
  4. In a separate skillet, sauté cauliflower rice in olive oil over medium heat for 4-5 minutes until tender and lightly golden. Season with salt to taste.
  5. Heat the drained black beans in a small saucepan over low heat with a pinch of cumin and salt for 3-4 minutes until warmed through.
  6. Divide cauliflower rice into 4 bowls. Top each bowl with seasoned beef, black beans, shredded cheddar, pico de gallo, and guacamole, arranging them in sections for that picturesque look.
  7. Add a generous dollop of sour cream in the center of each bowl, garnish with fresh cilantro, and serve with lime wedges on the side.
