A creamy and crunchy macaroni salad perfect for summer gatherings and potlucks.

Ingredients

  • 8 ounces elbow macaroni
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 cup diced celery
  • 1 cup diced bell pepper
  • 1/2 cup diced red onion
  • 1/2 cup sweet pickle relish
  • Salt and pepper to taste
  • 1/4 teaspoon garlic powder

Instructions

  1. Cook the elbow macaroni according to the package instructions until al dente. Once cooked, drain the pasta and rinse it thoroughly under cold water.
  2. In a large bowl, whisk together the mayonnaise and Dijon mustard until smooth and creamy.
  3. Add the cooled macaroni to the bowl along with diced celery, bell pepper, red onion, and pickle relish. Stir until coated in dressing.
  4. Sprinkle salt, pepper, and garlic powder over the mixture and toss gently to combine.
  5. Cover with plastic wrap and refrigerate for at least one hour to allow flavors to meld.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To prevent mayo from separating, ensure macaroni is completely cooled before mixing.
