Delicate French macarons in festive red and green, perfect for holiday celebrations.

  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • Food coloring (red and green)
  • 1 cup unsalted butter (for filling)
  • 4 cups powdered sugar (for filling)
  • 2 tablespoons heavy cream (for filling)
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Sift together the almond flour and powdered sugar until well combined and fluffy.
  3. Whisk the egg whites until frothy, then gradually add the granulated sugar, continuing to whisk until stiff peaks form.
  4. Fold the almond flour mixture into the egg whites carefully.
  5. Divide the batter into two bowls and add red food coloring to one and green to the other.
  6. Transfer both batters into separate piping bags and pipe small circles onto the prepared baking sheets.
  7. Tap the baking sheet to release air bubbles and let them sit for 30-60 minutes.
  8. Bake in the preheated oven for 15-20 minutes.
  9. Allow the macarons to cool completely on the baking sheet.
  10. Beat the butter until creamy, then gradually add the powdered sugar, heavy cream, and vanilla extract until smooth.
  11. Spread or pipe the filling between two macarons to create delightful sandwiches.
