A creamy and nostalgic Southern dessert made with layers of vanilla wafers, ripe bananas, and homemade pudding, topped with whipped cream.

Ingredients

Scale
  • 4 cups of milk
  • 1 cup of sugar
  • 3/4 cup of cornstarch
  • 1/2 teaspoon of salt
  • 4 large egg yolks
  • 1 teaspoon of vanilla extract
  • 1 box of vanilla wafers
  • 4 ripe bananas
  • Whipped cream for topping

Instructions

  1. In a medium saucepan, combine the milk, sugar, cornstarch, and salt. Cook over medium heat, stirring constantly until thickened and bubbly.
  2. In a separate bowl, whisk the egg yolks. Gradually stir about 1 cup of the hot mixture into the egg yolks to temper them. Return this mixture to the saucepan and cook for an additional 2 minutes. Add the vanilla extract.
  3. In a large serving dish, layer the vanilla wafers on the bottom, followed by the sliced bananas. Then, pour a generous layer of the pudding over the top. Repeat the layers, finishing with pudding on top.
  4. Cover with plastic wrap and chill in the refrigerator for at least 4 hours or overnight if possible. Before serving, top with a generous dollop of whipped cream.

Notes

For best results, allow the pudding to chill overnight. Serve with a sprinkle of crushed vanilla wafers or chocolate shavings for an extra touch.
