Instructions

  1. Whisk the egg mixture: In a bowl, whisk together eggs and milk. Season with salt and pepper to taste.
  2. Sauté the veggies: In a skillet, sauté bell peppers and onions over medium heat until soft and fragrant.
  3. Scramble the eggs: Add the egg mixture to the skillet and scramble until cooked through, stirring frequently.
  4. Combine the fillings: Remove from heat and stir in the cooked sausage and shredded cheese until melty and well combined.
  5. Prep the tortillas: Lay each tortilla flat on a clean surface and divide the egg mixture evenly among them.
  6. Roll up the burritos: Roll up each tortilla tightly, folding in the sides as you go, ensuring the filling is sealed inside.
  7. Wrap for storage: Wrap each burrito in foil or plastic wrap and place them in the refrigerator or freezer for future breakfasts.
