A simple and delicious casserole that combines the classic flavors of Eggs Benedict, perfect for brunch gatherings.

Ingredients

  • 1 loaf of Italian or French bread, cubed
  • 8 large eggs
  • 2 cups milk
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup diced Canadian bacon or ham
  • 1 cup shredded cheese (like cheddar or Swiss)
  • 1/4 cup chopped fresh chives or green onions
  • Hollandaise sauce (for serving)

Instructions

  1. Grease a 9×13 inch baking dish. Place the cubed bread in the dish.
  2. Whisk together eggs, milk, cream, salt, and pepper in a bowl until well combined. Pour this mixture over the bread.
  3. Distribute the diced Canadian bacon and cheese on top of the bread and egg mixture.
  4. Sprinkle chopped chives or green onions on top.
  5. Cover the dish with plastic wrap and refrigerate overnight.
  6. Preheat the oven to 350°F (175°C) the next morning.
  7. Bake for 45-55 minutes, until eggs are set and the top is golden brown.
  8. Serve warm with hollandaise sauce drizzled on top.

Notes

Choose a day-old loaf of bread for better texture and soak-up. For extra kick, add sautéed spinach or mushrooms. Customize ingredients, swapping Canadian bacon for sausage, feta, or smoked salmon.
