Cheesy Manicotti

A comforting dish of tender pasta tubes filled with creamy cheese and topped with rich marinara sauce.

  • 12 manicotti pasta tubes
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 egg
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the manicotti pasta in salted boiling water until al dente, then drain.
  3. Combine ricotta, 1 cup mozzarella, Parmesan, egg, parsley, salt, and pepper in a bowl until creamy.
  4. Stuff each manicotti tube with the cheese mixture using a spoon or piping bag.
  5. Spread a thin layer of marinara sauce in a baking dish.
  6. Arrange the stuffed manicotti in the dish, top with remaining marinara and leftover mozzarella.
  7. Bake covered with foil for 25 minutes.
  8. Unveil the dish by removing foil and baking for an additional 15 minutes.
  9. Cool for a few minutes before serving.

Notes

Serve with a side salad and garlic bread. Can be made ahead and stored in the refrigerator.
