  • 2 cups Brussels sprouts
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 3 tablespoons Maple syrup
  • Chopped herbs (optional)
  • Lemon (optional)
  • Thyme (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and trim the carrots and Brussels sprouts.
  3. Cut the carrots into even-sized pieces and halve the Brussels sprouts.
  4. Toss the vegetables with olive oil, salt, pepper, and maple syrup until evenly coated.
  5. Spread the coated vegetables on a baking sheet in a single layer.
  6. Roast in the preheated oven for 25-30 minutes, stirring halfway through.
  7. Sprinkle chopped herbs or squeeze lemon juice over the vegetables before serving.
