  • 200 grams feta cheese, cut into cubes
  • 3 cloves garlic, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon freshly ground black pepper
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Instructions

  1. Whisk together olive oil, lemon juice, lemon zest, garlic, oregano, crushed red pepper flakes, and black pepper to form a smooth marinade.
  2. Place the mixed olives and feta cheese cubes in a medium-sized airtight container.
  3. Pour the marinade evenly over the olives and feta, ensuring everything is well-coated.
  4. Tuck in the rosemary and thyme sprigs for an added fragrant touch.
  5. Seal the container tightly and refrigerate for at least 120 minutes, preferably overnight, to allow the flavors to meld.
  6. Remove from the refrigerator 20 minutes before serving and stir gently to redistribute the marinade.
