A comforting one-pan dish featuring tender gnocchi, vibrant tomatoes, and fresh spinach in a creamy sauce.

Ingredients

  • 1 package of gnocchi
  • 1 cup sun-dried tomatoes
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded
  • ½ cup Parmesan cheese, grated
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Sautéing garlic: In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
  2. Cooking tomatoes: Add sun-dried tomatoes and halved cherry tomatoes, cooking until softened.
  3. Adding spinach: Stir in fresh spinach and cook until wilted.
  4. Introducing gnocchi & cream: Add the gnocchi and pour in heavy cream, stirring to combine.
  5. Melting Parmesan: Stir in grated Parmesan cheese, allowing it to melt.
  6. Adding mozzarella: Add mozzarella cheese, season with salt and pepper, and cook until heated through.
  7. Serving: Serve warm and enjoy your one-pan meal.

Notes

Use a non-stick skillet to reduce sticking. Customize with proteins or different veggies as desired.
