A fresh and vibrant salad featuring creamy avocados, crisp cucumbers, sweet cherry tomatoes, and tangy feta, perfect for summer gatherings.

  • 2 avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 clove garlic, minced
  • Salt and black pepper, to taste
  • 1/4 cup pine nuts, toasted (optional)

Instructions

  1. Prepare Salad Components: Start by washing and drying all the produce. Dice the cucumber into 1/2-3/4 inch pieces, then halve the cherry tomatoes. For a milder flavor, thinly slice the red onion (you can soak it in ice water for 10-15 minutes to mellow the taste). Next, halve the pitted Kalamata olives, crumble the feta cheese, and finely chop the fresh parsley. If you’d like, toast your pine nuts in a dry skillet over medium heat until golden and fragrant.
  2. Prepare Avocados: Halve, pit, and dice the avocados into 3/4-1 inch cubes. To prevent browning, scoop them into a large mixing bowl with the prepared vegetables, olives, feta, parsley, and pine nuts (if using). It’s best to prepare the avocados last or sprinkle them with a bit of lemon juice.
  3. Make Zesty Dressing: In a small bowl, combine the extra-virgin olive oil, fresh lemon juice, minced garlic, salt, and black pepper. Whisk until well combined and emulsified, adjusting the seasoning to your taste.
  4. Assemble Salad: Pour the prepared dressing over the salad ingredients in the large bowl. Using two large spoons or salad tongs, gently toss until all components are evenly coated with the dressing—be careful not to mash the avocado!
  5. Serve: Taste the Zesty Mediterranean Avocado Salad and adjust the seasoning with more salt or pepper if necessary. Serve immediately to enjoy the best texture and freshness.
