A bright and colorful Mediterranean Couscous Salad featuring couscous, fresh vegetables, and creamy feta, perfect for warm afternoons or gatherings.

Ingredients

  • 1 cup couscous
  • 1 1/4 cups boiling water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a medium bowl, combine the couscous and boiling water. Cover and let sit for 5 minutes. Fluff with a fork.
  2. In another large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and olives.
  3. Add the fluffed couscous to the vegetable mixture.
  4. Drizzle with olive oil and lemon juice, then season with salt and pepper.
  5. Toss everything together until well mixed.
  6. Garnish with fresh parsley before serving.

Notes

This salad can be paired with grilled chicken or shrimp, and it stores well for up to 3 days.
