A vibrant and flavorful Mediterranean Pasta Salad that’s perfect for summer gatherings.

Ingredients

  • 8 oz pasta (fusilli or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1 cup Kalamata olives, pitted and sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Once it’s al dente, drain, and let it cool.
  2. Combine the cooled pasta, cherry tomatoes, cucumber, red onion, olives, and feta cheese in a large bowl.
  3. Whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper in a small bowl until well combined.
  4. Dress the salad by pouring the dressing over the pasta salad and tossing gently to combine all those flavors.
  5. Chill in the refrigerator for at least 30 minutes before serving, allowing the flavors to meld beautifully.

Notes

For added flavor, use fresh herbs and consider adding grilled chicken or chickpeas for a fuller meal.
