A vibrant and flavorful Mediterranean Salmon Bowl featuring flaky salmon over a bed of quinoa, topped with fresh vegetables and a zesty dressing.

  • 2 salmon fillets
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the salmon fillets generously with salt and pepper, and place them on a baking sheet drizzled with 1 tablespoon of olive oil. Bake for 12-15 minutes until cooked through and flaky.
  3. Combine the cooked quinoa, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese in a large bowl.
  4. Whisk together the remaining tablespoon of olive oil, lemon juice, salt, and pepper in a small bowl.
  5. Pour the dressing over the quinoa mixture and toss gently. Arrange the quinoa salad in bowls, topped with baked salmon fillets and garnish with fresh parsley.

Notes

For best flavor, use high-quality wild-caught salmon. Feel free to mix up the vegetables based on availability.
