  • 1 large lemon (zested and juiced)
  • 1/4 cup fresh dill (chopped)
  • 3 tbsp olive oil (divided)

  • 4 salmon fillets (6 oz each, skinless)
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp salt (to taste)
  • 1/4 tsp black pepper (to taste)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup cucumber (diced)
  • 1/4 cup Kalamata olives (halved)
  • 1/4 cup feta cheese (crumbled)
  • 1/4 cup red onion (thinly sliced)

Instructions

  1. Sauté the garlic: In a medium saucepan, heat one tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  2. Toast the rice: Add the rice to the pot and toast for 1-2 minutes, stirring constantly to enhance its nutty flavors.
  3. Cook the rice: Pour in the broth, bring to a boil, then reduce the heat to low, cover, and simmer for 15-18 minutes, or until the liquid is absorbed and the rice is tender.
  4. Prepare the salmon seasoning: While the rice is simmering, pat the salmon fillets dry with a paper towel. In a small bowl, combine the oregano, thyme, garlic powder, salt, and pepper.
  5. Season the salmon: Brush the salmon fillets with olive oil and generously season both sides with the herb mixture.
  6. Sear the salmon: Heat one tablespoon of olive oil in a large skillet or pan over medium-high heat. Place the salmon fillets in the hot pan and cook for 4-6 minutes per side, depending on thickness, until the salmon is cooked through and flakes easily with a fork.
  7. Finish the rice: Once the rice is cooked, fluff it with a fork. Stir in the lemon zest, lemon juice, and chopped fresh dill. Season with salt and pepper to taste.
  8. Serve the dish: To serve, spoon a generous amount of lemon rice into each bowl. Top with a salmon fillet and garnish with cherry tomatoes, cucumber, Kalamata olives, crumbled feta cheese, and thinly sliced red onion. Serve immediately.
