  • 1 pound shrimp, peeled and deveined
  • 2 cups cooked quinoa or couscous
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the shrimp, seasoning generously with salt and pepper. Cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove them from the pan and set aside.
  2. Combine the cooked quinoa or couscous, halved cherry tomatoes, diced cucumber, red onion, sliced Kalamata olives, and crumbled feta cheese in a large bowl.
  3. Squeeze the fresh lemon juice over the mixture and toss gently to combine all the flavors.
  4. Serve the perfectly cooked shrimp over the vibrant salad, garnishing with fresh parsley for a pop of color and taste.
