  • 2 cups of vegetable broth
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 2 cups of spinach or kale
  • Fresh herbs (such as parsley or cilantro) for garnish

Instructions

  1. Heat Up the Pot: In a large pot, heat a splash of olive oil over medium heat.
