A vibrant and refreshing mocktail that evokes tropical vibes with its stunning blue hue and sparkling finish.

Ingredients

  • 1 cup coconut water
  • 1/2 cup pineapple juice
  • 1/4 cup lemonade
  • 1 teaspoon butterfly pea flower tea
  • 1 tablespoon hot water
  • 1 teaspoon agave syrup
  • 1 tablespoon lime juice
  • 4 mint leaves
  • 1/2 cup sparkling water
  • 1 cup ice cubes
  • 1 pinch of edible glitter

Instructions

  1. Steep the butterfly pea flower tea in hot water for about 3 minutes, then strain out the flowers.
  2. Combine the coconut water, pineapple juice, and lemonade in a pitcher.
  3. Add agave syrup and lime juice, mixing well.
  4. Pour the steeped butterfly pea flower tea into the mixture and stir.
  5. Muddle the mint leaves in the pitcher.
  6. Fill serving glasses with ice cubes.
  7. Pour the tropical mocktail mixture into each glass.
  8. Top with sparkling water for a layered effect.
  9. Sprinkle edible glitter into each glass and stir gently.
  10. Garnish with a sprig of fresh mint and a lime wheel before serving.

Notes

Butterfly pea tea can be substituted with blue curaçao syrup or other herbal teas. Chill ingredients beforehand for a frosty beverage.
