A hearty and satisfying Mexican Chicken Casserole bursting with flavors, perfect for cozy family gatherings.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can cream of chicken soup
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup salsa
  • 1 cup Mexican cheese blend
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Tortilla chips or tortillas for layering

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, cream of chicken soup, black beans, corn, salsa, chili powder, cumin, salt, and pepper in a large bowl.
  3. Prepare a 9×13 inch baking dish by spreading a layer of tortilla chips or tortillas.
  4. Pour half of the chicken mixture over the chips, spreading it evenly.
  5. Sprinkle half of the cheese on top of the chicken mixture.
  6. Repeat the layers with the remaining chicken mixture and top with the remaining cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  8. Serve hot and enjoy!

Notes

Use rotisserie chicken for quicker prep and feel free to add any veggies you have on hand.
