Tender chicken infused with zesty lime juice and smoky spices, perfect for tacos, burritos, or salads.

Ingredients

  • 2 lbs chicken breasts
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Juice of 2 limes
  • 1 cup chicken broth
  • Fresh cilantro for garnish

Instructions

  1. Combine the chicken, onion, garlic, cumin, chili powder, paprika, salt, pepper, lime juice, and chicken broth in a slow cooker.
  2. Cover and cook on low for 6-8 hours or until the chicken is tender and easily shredded.
  3. Shred the chicken using two forks and stir it into the juices.
  4. Serve in tacos, burritos, or on salads, garnished with fresh cilantro.

Notes

For added heat, include cayenne pepper or jalapeños. Substitute smoked paprika for a smokier flavor.
