A flavorful Mexican rice dish bursting with fresh ingredients, perfect as a side or a satisfying vegetarian meal.

  • 1 cup long-grain white rice
  • 2 cups chicken or vegetable broth
  • 1 medium onion, finely chopped
  • 1 medium bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes with green chilies
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 tablespoon vegetable oil
  • to taste salt
  • for garnish fresh cilantro leaves

Instructions

  1. Rinse the rice under cold water in a fine-mesh strainer until the water runs clear.
  2. Heat the vegetable oil in a medium saucepan over medium heat.
  3. Sauté the onion and bell pepper in the heated oil for about 3-4 minutes until softened.
  4. Add the minced garlic and cook for an additional minute.
  5. Toast the rinsed rice, ground cumin, and chili powder for about 2 minutes.
  6. Combine with the diced tomatoes and broth, and season with salt. Bring to a boil.
  7. Simmer the mixture on low heat, covered, for about 15-20 minutes until the rice is cooked.
  8. Rest the rice off the heat, covered, for an additional 5 minutes.
  9. Fluff the rice with a fork and garnish with fresh cilantro leaves before serving.

Notes

For added spice, consider including jalapeños or cayenne pepper.
