A delightful explosion of flavors, this Mexican street corn salad combines sweet corn, zesty lime, and creamy cotija for a refreshing summer dish.

Ingredients

  • 1/2 cup red onion, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Combine the corn, red onion, cherry tomatoes, cilantro, and cotija cheese in a large bowl and toss together gently.
  2. Whisk together the mayonnaise, lime juice, chili powder, salt, and pepper in a separate bowl until well combined.
