  • 1 1/2 teaspoons baking powder

  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1/2 cup unsalted butter (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 1/2 cup unsweetened cocoa powder (for frosting)
  • 1/3 cup milk (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Combine flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl. Whisk together.
  3. Add in the eggs, whole milk, vegetable oil, and vanilla extract. Beat the batter on medium speed for about 2 minutes.
  4. Carefully stir in the boiling water.
  5. Pour the batter evenly into the prepared pans.
  6. Bake for 30-35 minutes or until a toothpick comes out clean.
  7. Cool the cakes in the pans for about 10 minutes, then remove to wire racks to cool completely.
  8. Make the frosting by creaming the unsalted butter and gradually adding powdered sugar and cocoa powder with milk.
  9. Spread a layer of frosting between the cakes and frost the top and sides of the cake.
  10. Serve and enjoy!
