A rich and gooey chocolate cake topped with mini marshmallows and chocolate frosting that brings back sweet memories.

Ingredients

  • 1 cup butter
  • 2 cups sugar
  • 1 tsp vanilla extract
  • 4 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 cup cocoa powder
  • 1 cup chopped walnuts (optional)
  • 1 cup mini marshmallows
  • 1 cup chocolate frosting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Creaming together the butter, sugar, and vanilla until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition.
  4. Combine the flour and cocoa powder in a separate bowl and add to the butter mixture, stirring until just combined.
  5. Fold in the chopped walnuts, if using.
  6. Pour the batter into the prepared pan and spread it evenly.
  7. Bake for 30-35 minutes, until a toothpick inserted comes out clean.
  8. Remove from the oven and sprinkle marshmallows on top.
  9. Return to the oven for an additional 5-10 minutes until marshmallows are puffy and slightly browned.
  10. Let the cake cool completely, then spread chocolate frosting on top before serving.

Notes

Serve warm or at room temperature. Pairs well with vanilla ice cream or whipped cream.
