Delightfully zesty lemon bars with a buttery crust, perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup freshly squeezed lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8-inch square baking dish to prepare for your delicious creation.
  2. In a mixing bowl, combine the flour and powdered sugar. Cut in the butter until the mixture resembles coarse crumbs. Press this mixture evenly into the prepared baking dish to form a crust.
  3. Bake the crust in the preheated oven for about 15 minutes, watching for it to turn a light golden color.
  4. In another bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, baking powder, and a pinch of salt until well combined.
  5. Pour the lemon mixture over the baked crust and return it to the oven. Bake for an additional 20 minutes or until set.
  6. Allow the lemon bars to cool completely, then dust with powdered sugar before cutting them into squares.

Notes

For extra lemon flavor, increase lemon zest to 2 teaspoons. Use freshly squeezed lemon juice for best results. Store leftovers in an airtight container in the fridge for up to a week.
