A delightful cherry pie that captures the essence of summer with its flaky crust and sweet, tart filling.

  • 1 pie crust (store-bought or homemade)
  • 2 cups fresh or canned cherries (pitted)
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 425°F (220°C) to ensure it’s hot enough for a perfectly baked pie.
  2. Mix the pitted cherries, sugar, cornstarch, lemon juice, and vanilla extract in a mixing bowl until well coated.
  3. Pour the cherry filling into your pie crust and dot with pieces of butter.
  4. Place the top crust over the pie, pressing the edges to seal.
  5. Cut slits in the top crust to allow steam to escape.
  6. Bake for 30-35 minutes until the crust is golden brown and the filling is bubbly.
  7. Cool the pie for at least 15 minutes before slicing.

Notes

Serve with vanilla ice cream or whipped cream. Store leftovers at room temperature for up to 3 days.
