Instructions

  1. Sautéing the Aromatics: In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until it begins to soften.
  2. Adding Garlic and Building Flavors: Introduce the minced garlic to the pot and cook for an additional minute, stirring constantly to avoid burning.
  3. Browning the Sausage: Remove the casing from the Italian sausage and add it to the pot. Cook until browned, breaking it apart with a wooden spoon (about 5-7 minutes).
  4. Simmering the Potatoes: Once the sausage is browned, add the sliced potatoes to the pot along with the chicken broth. Bring to a boil, then reduce heat and let simmer for 15 minutes or until the potatoes are tender.
  5. Adding the Finishing Touches: Stir in the chopped kale, heavy cream, and red pepper flakes (if using). Let the soup simmer for another 5 minutes to let the flavors meld. Season with salt and pepper to taste.
