  • 1.5 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.5 cup vegetable oil
  • 1 cup unsweetened applesauce
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup raisins (optional)
  • 1 cup chopped nuts (walnuts or pecans, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking dish.
  2. In a large mixing bowl, combine the flour, sugar, baking soda, baking powder, cinnamon, and salt. Mix well to ensure everything is evenly distributed.
  3. In another bowl, whisk together the vegetable oil, applesauce, eggs, and vanilla extract until well blended and smooth.
  4. Pour the wet ingredients into the dry ingredients. Stir gently with a wooden spoon, or use an electric mixer on low speed until just combined. Be careful not to overmix; a few lumps are okay!
  5. If you’re using them, fold in the raisins and chopped nuts evenly into the batter to enhance the flavor and add texture.
  6. Pour the batter into the prepared baking dish and spread it evenly to ensure even baking.
  7. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Store any leftovers in an airtight container at room temperature for up to three days. You can also freeze the cake for later indulgence, wrapping each slice in plastic wrap and placing it in a freezer bag for up to three months.
