Delightful muffins pairing sweet strawberries with zesty oranges, topped with a buttery streusel.

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup chopped strawberries
  • Zest of 1 orange
  • 1/2 cup streusel topping (oats, butter, flour, sugar, cinnamon)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the all-purpose flour, whole wheat flour, sugar, baking powder, and salt in a large bowl.
  3. Whisk together the melted butter, eggs, milk, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and mix until just combined.
  5. Fold in the chopped strawberries and orange zest.
  6. Fill each muffin cup about 2/3 full with the batter.
  7. Sprinkle the streusel topping generously over each muffin.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let them cool in the pan for a few minutes before transferring to a wire rack.

Notes

Serve warm with butter or whipped cream. Can be stored at room temperature for 3 days or refrigerated for a week.
