Creamy cheesecake bars with a crunchy Oreo crust, perfect for sharing with loved ones.

  • 24 Oreo cookies
  • 1/4 cup unsalted butter, melted
  • 2 packages (8 ounces each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup whipped cream
  • Additional Oreo cookies for topping

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking pan.
  2. Crush 24 Oreo cookies into fine crumbs and mix with the melted butter. Press into the bottom of the prepared pan.
  3. Mix the softened cream cheese, sugar, and vanilla extract until smooth and creamy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Fold the whipped cream into the cream cheese mixture.
  6. Pour the cream cheese mixture over the Oreo crust and spread evenly.
  7. Bake for 30-35 minutes, or until set with a slight wobble in the center.
  8. Cool to room temperature and chill in the refrigerator for at least 4 hours.
  9. Crush additional Oreo cookies on top before serving.

Notes

Store leftovers tightly covered in the refrigerator for up to 5 days. Can also be frozen for up to 2 months.
