A comforting and creamy tomato soup that recreates the beloved flavors of Panera Bread.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cans (14.5 oz each) diced tomatoes
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Croutons for topping
  • Shredded cheese for topping (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for about 1 minute until fragrant.
  4. Add the diced tomatoes and vegetable broth, then bring to a boil.
  5. Reduce heat and simmer for 15 minutes, letting the flavors meld together beautifully.
  6. Blend the soup using an immersion blender until smooth (or carefully transfer to a blender).
  7. Stir in the heavy cream and sugar, and season with salt and pepper to taste.
  8. Serve hot, topped with croutons and a sprinkle of cheese if desired.

Notes

For a vegan version, swap the heavy cream for coconut cream or cashew cream. Leftover soup can be stored in an airtight container for up to 3 days or frozen for up to 3 months.
