A warm and hearty baked oatmeal infused with sweet, juicy peaches, perfect for cozy mornings.

Ingredients

  • 2 cups rolled oats
  • 2 cups milk (or any plant-based milk)
  • 2 ripe peaches, diced
  • 1/4 cup maple syrup or honey
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup chopped nuts (optional)
  • 1 teaspoon vanilla extract
  • 1 egg (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the rolled oats, baking powder, cinnamon, and salt in a large mixing bowl.
  3. Whisk together the milk, maple syrup, vanilla extract, and egg (if using) in another bowl.
  4. Pour the wet ingredients into the bowl with the dry ingredients and mix until just combined.
  5. Fold in the diced peaches and nuts (if using).
  6. Pour the mixture into a greased baking dish, spreading it evenly.
  7. Bake for 30-35 minutes or until the top is golden brown and fragrant.
  8. Let it cool slightly before serving.

Notes

Serve warm with a dollop of Greek yogurt or a splash of additional maple syrup. Store leftovers in an airtight container in the refrigerator for up to five days.
