Delicate crepes filled with sweet peaches and topped with fluffy whipped cream, reminiscent of summer mornings at Grandma’s house.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 2 cups sliced fresh peaches
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • Whipped cream (for serving)

Instructions

  1. Whisk together the flour, eggs, milk, melted butter, and vanilla extract until smooth.
  2. Heat a non-stick skillet over medium heat and pour in the crepe batter, swirling to coat the pan evenly. Cook until the edges are lightly golden, then carefully flip and cook the other side.
  3. Combine the sliced peaches, sugar, lemon juice, and cinnamon in another bowl; toss to coat.
  4. Fill each crepe with the peach mixture, fold gently, and serve warm with whipped cream.

Notes

These crepes can be served for breakfast, brunch, or as a dessert. Pair with crispy bacon or a fresh fruit salad.
