A delightful Peach Crumble Cobbler, perfect for evoking warm summer memories with its sweet and juicy filling beneath a crunchy topping.

  • 6 large ripe peaches, peeled and sliced
  • ½ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • ½ cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the sliced peaches, granulated sugar, lemon juice, and vanilla extract. Toss until well-coated.
  3. Spread the peach mixture evenly in the bottom of the baking dish.
  4. In another bowl, mix together the flour, rolled oats, brown sugar, cinnamon, and salt.
  5. Pour the melted butter into the dry mixture and stir until crumbly.
  6. Sprinkle the crumble mixture evenly over the peaches.
  7. Bake in the preheated oven for 30 minutes, until golden brown.
  8. Remove from the oven and allow to cool slightly before serving.
  9. Serve warm with a scoop of vanilla ice cream or whipped cream.
