A rustic dessert that captures the essence of summer with sweet ripe peaches and a flaky crust.

Ingredients

  • 2 cups fresh peaches, sliced
  • 1 pre-made pie crust
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)
  • Pinch of salt

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine sliced peaches, sugar, cornstarch, cinnamon, lemon juice, and salt in a bowl.
  3. Roll out the pie crust on a parchment-lined baking sheet.
  4. Place the peach mixture in the center of the crust, leaving a 2-inch border.
  5. Fold the edges of the crust over the filling.
  6. Mix the egg and milk for the egg wash and brush over the crust.
  7. Bake for 30-35 minutes or until the crust is golden brown.
  8. Allow to cool slightly before serving.

Notes

Serve warm with vanilla ice cream or whipped cream. Can store leftovers in the refrigerator for up to 2 days.
