A simple yet stunning dessert featuring a buttery crust and sweet, juicy peaches, lightly spiced with cinnamon.

  • 23 ripe peaches, sliced
  • 1 pre-made pie crust or puff pastry
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • Egg wash (1 egg beaten with 1 tablespoon water)
  • Flour for dusting

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the pie crust on a floured surface to a 12-inch circle.
  3. Combine the sliced peaches, sugar, cornstarch, cinnamon, and lemon juice in a bowl.
  4. Place the peach mixture in the center of the crust, leaving a 2-inch border.
  5. Fold the edges of the crust over the peaches.
  6. Brush the folded crust with the egg wash.
  7. Bake for 30-35 minutes until the crust is golden brown and the peaches are bubbly.
  8. Let the galette cool slightly before serving.

Notes

For the best flavor, choose ripe, fragrant peaches. You can substitute frozen peaches if fresh ones are not available.
