A delightful and easy dessert combining the flavors of traditional pecan pie with minimal effort, perfect for holiday gatherings.

Ingredients

  • 1.5 cups chopped pecans (toasted if desired)
  • 1 cup packed brown sugar
  • 0.5 cup light corn syrup
  • 3 large eggs (lightly beaten)
  • 0.5 cup unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1 box (15.25 oz) yellow cake mix (do not prepare the mix)
  • 0.75 cup unsalted butter (melted)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Combine the chopped pecans, brown sugar, corn syrup, eggs, 0.5 cup of melted butter, and vanilla extract in a medium bowl.
  3. Pour the pecan mixture into the prepared baking dish and spread it out evenly.
  4. Sprinkle the dry yellow cake mix evenly over the top of the pecan filling.
  5. Drizzle the remaining 0.75 cup of melted butter over the dry cake mix.
  6. Bake for 45-55 minutes until the topping is golden brown and the filling is bubbly.
  7. Let the cake cool for at least 15 minutes before serving.
  8. Serve warm, ideally with a scoop of vanilla ice cream.

Notes

Toast pecans for 5-7 minutes before using for enhanced flavor. Can make ahead of time by preparing the pecan mixture a day before.
