A delicious and vibrant dessert featuring caramelized pineapple and a moist cake, perfect for any occasion.

  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 can (20 oz) sliced pineapple, drained
  • Maraschino cherries (optional)
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan to ensure the cake doesn’t stick.
  2. In a skillet, melt the butter over medium heat. Stir in the brown sugar until it has dissolved completely. Pour this mixture into the prepared cake pan.
  3. Arrange the drained pineapple slices over the sugar mixture. If you like, place a cherry in the center of each pineapple slice for extra sweetness and color.
  4. In a separate bowl, mix the flour, baking powder, and salt together. In another bowl, cream the granulated sugar and remaining butter. Beat in the eggs and vanilla until well combined.
  5. Alternate adding the flour mixture and milk to the creamed mixture, mixing just until combined.
  6. Pour your batter over the pineapple in the cake pan, spreading it evenly.
  7. Bake in the oven for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  8. Once baked, let the cake cool for a few minutes. Then, invert it onto a serving plate to reveal the beautiful pineapple topping.

Notes

Serve warm or at room temperature, optionally with vanilla ice cream.
