  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • Maraschino cherries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Drain the pineapple slices thoroughly, reserving the juice.
  3. Melt the butter in the greased cake pan in the oven.
  4. Sprinkle the brown sugar evenly over the melted butter.
  5. Arrange the pineapple slices over the brown sugar, adding cherries if desired.
  6. Combine the flour, granulated sugar, baking powder, and salt in a bowl.
  7. Mix the milk, eggs, vanilla extract, and reserved pineapple juice in another bowl.
  8. Add the wet ingredients to the dry ingredients and stir until just combined.
  9. Pour the batter over the arranged pineapple slices.
  10. Bake for 40-45 minutes, or until a toothpick comes out clean.
  11. Cool for a few minutes and invert onto a serving plate.
